Lobster 1

Lobster is considered to be the ‘king of seafood’, not just for its delicious meat but also for its appearance, which makes it difficult to tackle, especially by novice cooks, who can’t make the head or tail of a lobster. Even as it is true that adding a lobster to a menu makes it instantly luxurious, it can be a bit difficult to tackle, be it its juicy claws, or the tender tails. However, if you are determined to make a meal out of a lobster, here is how you can do so, at minimal risk to your limbs or face:

1. How to Remove Lobster Meat:

a. You need to hold the lobster firmly with one hand. Twist its claw off, keep it aside and then twist off its legs too, one by one.

b. You need to hit the claw until it cracks. This can be done with a heavy knife or a small mallet. Separate the pincer from the claw and break the latter into three parts.

c. Crack open the claw and the pincers, and take out the meat.

d. Place the body of the lobster in front of you, flattened on a kitchen board. Insert a sharp knife into the middle of the body and slice open the lobster lengthwise. As it opens out, pull out the stomach sac, feather gills and the intestines.

2. How to Buy a Lobster:

a. Even before you start to cut a lobster, you should be able to identify how to buy a fresh lobster, which will eventually make a good meal. So, the first thing to learn is that the tail of your lobster should curl when you pick it up in your hands.

b. A lobster should show no signs of discoloration, so that is what you check the next.

c. Ensure that its both claws are perfect and aligned.

d. Softer lobster shell means the meat will be sweet while the harder shell means it will have more meat. So, the choice is yours.
